Hello Hello!
Nothing screams summer more than a good ‘ol sandwich! Growing up, I would eat PB+J on the beach, ham and cheese with my grade school friends, and all the build your own sandwiches at cookouts.
So, I decided to create the ultimate, gut healthy, veggie filled sandwich! It is vegan (as long as you buy vegan bread), gluten free (again, with gf bread ;)), and totally delicious! It’s super easy to make, no-baking needed (except toasting da bread).
This sandwich is extra special because of a very cool ingredient- beetkraut! It’s basically like sauerkraut, but made with cabbage and beets!
Fermented veggies are amazing for your gut, because they replenish all those healthy bacteria we need to properly digest your food! Instead of taking a probiotic pill, simply having 1-2 Tablespoons of fermented veggies can give you just as many and more benefits! There are so many cool kinds of fermented veg out today, like turmeric kraut, kimchi, pickled carrots, and more!
Ok, are you ready for the sandwich recipe?
The Ultimate Veggie Sandwich (GF) // Just A Veg

Total Time: 10 minutes
Serves: 1
Ingredients:
2 pieces your favorite gluten free bread (here’s the one I used below)
3 Tablespoons classic hummus
2 Tablespoons beetkraut or your favorite fermented veggies
1/4 cucumber, sliced
1/4 beefsteak tomato, sliced
2 pieces butter lettuce
Directions:
- Begin toasting your bread
- Prep all your veggies!
- Once your bread is toasted, begin building your sandwich. Hummus, tomato, beetkraut, cucumber, and lettuce.
- Top with your other piece of bread, slice, and enjoy!
