Sorry for my lack of posting the past couple of weeks! I have been busy traveling and enjoying my summer.
Speaking of summer, today I am sharing the perfect recipe for beating the heat. It is easy, fast, super healthy, and delicious. Of course, I am talking about POPSICLES!
Popsicles are a great option for summer because they are lower in calories, refreshing, and give off summertime vibes like no other. Unofrtunately, a lot of the popsicles we buy in the stores today are full of added sugar, food coloring, and unnecessary additives. Making your own is so easy and I think more delicious! You can get creative with your flavors and create some epic summertime treats!
I love this basic popsicle recipe because it
- literally takes 5 minutes to make
- is customizable to your tastebuds
- is refined sugar free
- creates hydrating desserts to beat the heat
- is gluten free and vegan

Basic Vegan Popsicles
By: Just A Veg
Prep Time: 5 minutes
Total Time: 2-3 hours
Makes: 6 pops
1 can full fat coconut milk (cream and water)
2 cups frozen fruit of your choice
1/2 cup maple syrup or honey
Blend all ingredients together! Pour into a popsicle mold or plastic cups (if you are using this method add popsicle sticks). Freeze for 2-3 hours until frozen, and enjoy!♥
It’s really that simple! I love making berry popsicles (strawberry and blueberry are pictured), but mango, pineapple, banana peanut butter, and raspberry are some other ideas!
You could even throw some hemp, chia, or flax in there for an extra boost!
