No Bake PB & J Dessert Bars: Vegan, GF, Refined Sugar Free // Just A Veg

Hello!

Who doesn’t love a good PB & J? Since I LOVE peanut butter (yes, all caps for extra emphasis) and adore berries, PB & J has always been a go-to comfort food. I’ll eat it on bread, rice cakes, by the spoonful (lol), you name it. So, I was experimenting in the kitchen, and was wondering how I convert the classic PB & J into a HEALTHY dessert that tasted good. Amazingly, I created this recipe on the spot and it turned out SO GOOD!

This PB & J bar is no-bake, vegan, gluten free, refined sugar free, and dang delicious. The crust is made with 6 simple ingredients, and the cream topping only 3! 9 ingredients, healthy, and delicious? You can’t beat it.

Let’s get onto the recipe!

No Bake PB & J Bars

Prep Time: 20 minues

Total Time: 3-4 hours

NOTE: Take a can of full fat coconut milk and put it in the fridge the night before you want to make this recipe!

For the PB crust

Ingredients:

1 1/2 cup oats

1/2 cup hemps seeds (yay omega-3’s!)

1/2 cup peanut butter

1 tablespoon coconut oil

1/4 cup maple syrup

1 teaspoon cinnamon

 

Directions: Combine oats, hemp seeds , and cinnamon in a large bowl. Add the remaining ingredients, stirring until a dough forms. Line a 8×8 pan with parchment paper, take the mix, and press it evenly into the pan. Refrigerate until hardened!

 

For the Jam Cream:

Ingredients:

1 can full fat coconut milk refrigerated

2 tablespoons maple syrup

1/2 cup Trader Joes raspberry jam (its sweetened with grape juice, not cane sugar! Tangy and delicious. You can use other jam but if you want it refined sugar free this one tastes amazing!)

 

Directions: Scoop the hardened coconut cream from your coconut milk can out and into the blender. You don’t want the water, so you can save it for a smoothie or other recipe! Add the maple syrup to the blender and blend for 2-3 minutes or until fluffy and the consistency is like a thick whipped cream. Take your jam and use a spatula to swirl it into your cream. Pour the cream onto the hardened crust and freeze for 2-3 hours or until completely hardened!
